What effect does tannin have on wine?

There are natural yeast cells on the skin of the grape that come in contact with the natural juice sugar within that causes the chemical reaction called "fermentation" that merely transforms sugar into alcohol. Sulfites in wine occur naturally during fermentation to kill the air during the wine making process to prevent oxidation and bacterial spoilage, enhancing the taste, color and stability of wine, as it has for centuries.

According to experts, sulfites in wine should cause no problem for over 99% of American population, whereas sulfites in vegetable, fresh fruits, fruit juices, and fish are more likely to cause reactions in sulfite-sensative individuals than wine.
